prawn quesadillas

250 mL grated mozzarella cheese
8 corn tortillas
125 mL prawns
125 mL crumbled feta
75 mL chopped fresh dill
50 mL chopped red onion
1/4 tsp hot chilli sauce

1. Sprinkle half of the mozzarella over half of each tortilla.

2. In small bowl, stir together tomato, prawns, feta cheese, dill, onion and chilli sauce; spoon evenly over mozzarella.

3. Top with remaining mozzarella.

4. Fold uncovered half over filling; gently press edges together

5. In large non-stick skillet over medium-high heat, cook quesadillas, two at a time, for 3 to 5 minutes or until bottom is lightly browned.

6. Turn and cook until cheese is melted and bottom is lightly browned.

7. Cut each into 3 wedges.
